The Nero d'Avola Bioitalia Wine comes from grapes from the vine, harvested in the traditional growing area. The vineyards are conducted with organic methods, they are implanted on loose and sandy soils, poor in organic matter. The position is on a hill, the training system is the espalier with spurred cordon. The carefully selected grapes are harvested by hand. The vinification is conducted without use of sulphites, by resorting only to tannins extracted from the vine and other essences to prevent oxidation. After the first racking, the wine is aged in steel for at least 3 months; Once bottled mature in the bottle for another two months before being marketed.
