The Nebrodi black pig Capocollo, also called coppa, is the most delicious cut of pork after raw ham, and also the tastiest although with an extremely delicate taste. Derived from the part of the Nebrodi black pig between the neck and the head, it has a variable grain of fat, set like a diamond, inside the meat with a strong red color, compact and juicy at the same time. The seasoning does not exceed 5 months, and at the same time, it cannot last less than 4 months, to create that balance between firmness and delicacy typical of the capocollo.
The Nebrodi black pig capocollo has a traditional processing, with the Sicilian method flavored as it once was, to give the palate the emotion of a decidedly Sicilian taste. The sodium content per 100 gr. it is only 2.39 gr.
