Put the spelt to soak in water for a couple of hours.
Clean the vegetables and cut it in squares. Place in a large pot with two tablespoons of oil and fry gently for about ten minutes.
Add a quart and a half of vegetable broth with pearl barley and crushed the tomatoes with a fork. Add salt and cook until vegetables and barley are very soft.
Serve with a drizzle of olive oil and a good sprinkling of black pepper.
