Thisorganic wineis bornon the beautifulhillsofSannio,from grapesgrown onsandy-clayeysoilsresultingfrom the weathering ofsandstones.Theposition is on asteep slopeand the exposure issouth-west.The vine is100% Falanghina.The vineyardsof 25 years,plantedin rows,with3,300plants perhectareare conductedwithorganic methodssince 1994.The wine is madebyhand-pickingthe grapesfrom1 Octoberonwards,destemmingfollowed bypressing, settlingat 12 °C for 24hours anddecantingof the clear must, which is startedin fermentationat 16 °C.Alltemperaturewithout any addition ofsulphites.Afterthe first rackingthe wine is agedin steel forat least three months,then bottledand aged inthe bottle foranother three months.
