The Sicilian thistle pate is a true excellence of the Sicilian Nebrodi gastronomy. Produced with native plants of the company-owned land, thistle pate is, as for Sicilian wild fennel, rich in healing properties for the organism that derive from the same plant. Powerful purifying for the liver, Sicilian thistle has a bitter taste, but excellent both blanched with olive oil and lemon, and with a batter fried in plenty of oil. Fixed presence in the traditional Sicilian menus of the holidays, especially Christmas, given its seasonality, the thistle worked as a pate is an excellent accompaniment for meat dishes, or for original and tasty appetizers.
